3 tablespoons olive oil
2 pounds smoked sausage, sliced into bite-sized pieces
1 medium onion, chopped
3 cloves garlic, minced
2 cups chicken broth
1 12-ounce can diced tomatoes
1/2 cup heavy cream
1/4 teaspoon pepper
8 ounces whole wheat bow tie pasta
2 cups shredded cheddar cheese
In a large pan, heat the olive oil over medium heat.
Sauté the chopped onions and sliced sausage until the onions are translucent.
Add the minced garlic and stir for another minute.
Pour in the chicken broth, diced tomatoes, heavy cream, and pepper. Stir until well combined.
Add the pasta and make sure it is well coated with the sauce and fully covered with liquid.
Cover the pan and simmer for 15-20 minutes, or until the pasta is cooked to al dente.
Stir in 1 cup of shredded cheddar cheese until melted.
Serve with additional cheese and a dollop of sour cream, if desired. Enjoy!
