Okay, okay, so you may have noticed or soon be noticing I didn’t add bacon to this. Yes, if I made it for just a couple of people I am all about the bacon, but this dish was made for a lovely vegetarian friend so I nixed the bacon.
8 medium russet potatoes.
1 cup of sour cream.
½ cup of mayonnaise.
1 package of cooked and crumbled bacon.
1 small chopped onion.
1 ½ cups of shredded cheddar cheese.
Salt and pepper.
HOW TO MAKE:
First wash and cut the potatoes to bite sized pieces then cover with water and boil to cook for about 20 to 25 minutes then drain and cool.
In a bowl, mix together the mayonnaise and sour cream and add in the onions, chives, cheese, salt and pepper and mix with the cooled potatoes.
Top with extra shredded cheese and bacon before serving.
